Kesari Bhaat, the South Indian counter-part of the sheera, is an ever-popular sweet treat for young and old alike!
Perhaps due to this reason, you will find the Kesari Bhaat is a part of most breakfast or lunch combos at South Indian restaurants.
It is a quick and easy sweet dish made of rava, sweetened with sugar, and flavoured with cardamom and kesar. Often fruits like pineapple, chickoo or apple may also be added to the Kesari Bhaat.
Kesari Bhaat is very popular in South India, especially Karnataka. You can also try sheera recipes like Moong Dal Sheera or Walnut Sheera

Ingredients
For Kesari Bhaat
1 cup semolina (rava / sooji)
1 cup sugar
1/2 cup ghee
1/2 tbsp saffron (kesar) strands
1 tbsp raisins (kismis)
2 tbsp cashew nut (kaju) halves
a pinch of saffron colour
1/2 tsp cardamom (elaichi) powder
Method
For kesari bhaat
- To make kesari bhaat recipe, combine 1/2 cup hot water, saffron strands and a pinch of saffron colour in a small bowl.
- Mix well and keep aside to soak it for 30 minutes.
- Heat half quantity of ghee in a deep pan, add raisins and cashews. Sauté on a medium flame for a minute.
- Add rava, mix well and cook on a medium flame for 2 to 3 minutes.
- Add sugar and cook on a medium flame for 2 to 3 minutes until the sugar melts, while stirring continuously.
- Add the soaked saffron mixture and mix well. Add 2 cups of hot water. Keep mixing and cook on a medium flame for 3 to 4 minutes, while stirring continuously.
- Once the semolina is perfectly cooked, add cardamom powder and the remaining ghee. Mix well and cook further for 1 to 2 minutes.
- Serve kesari bhaat immediately.

I made Kesari bhaat when we were craving dessert post dinner. Very simple to make. I didn''t add the food color though.
