Ingredients

For Almond Bread
1 1/4 cups almonds (badam)
1/2 cup readymade almonds (badam)
4 tbsp powdered flaxseeds (alsi)
2 tsp apple cider vinegar
1 tsp salt
1 tsp baking powder
Method

For almond bread

  1. To make almond bread, put the almonds in a mixer and blend till smooth.
  2. Combine the almond milk, flax seeds powder and apple cider vinegar in a bowl and mix well. Keep aside.
  3. Combine the almond flour, salt, baking powder in a deep bowl and mix well.
  4. Add the almond milk mixture and 2 tbsp of water and mix very well using a spatula.
  5. Pour the mixture into a greased 200 mm. (8”) × 100 mm. (4”) rectangle aluminium loaf tin and bake in a pre-heated oven at 200ºc (400ºf) for 35 minutes.
  6. Cool the almond bread slightly, demould and cut into 11 equal slices.
  7. Serve the almond bread immediately or store in an air-tight container and use as required.

For the eggless almond bread

  1. To prepare homemade almond bread, put the almonds in a mixer jar.

  2. In a deep bowl, take the prepared almond flour.
  3. Add salt.
  4. Add baking powder. Ensure your baking powder is fresh. Check the use-by date or test it by putting a little baking powder in a glass of warm or hot water. If it fizzes, it’s fresh to use.
  5. Mix well.
  6. Add the almond milk mixture.
  7. Add 2 tbsp of water.
  8. Mix very well using a spatula.
  9. Pour mixture into the greased aluminium loaf tin. Smooth the top, but don’t press down too much – keep as much air in the mixture as possible.If you enjoy that added crunch, sprinkle a mix of nuts and seeds on top of the almond bread loaf before baking. I made this bread today and it turned out pretty good! I added crushed walnuts and pumpkin seeds on top for some extra crunch...good choice! I did use lemon juice, instead of vinegar and will either half the salt, or remove it all together next time (not much of a salt eater). Also, since all our ovens are different, I started my timer for 20 minutes. Checked with a toothpick and added another 10 minutes, then another 5 minutes, perfectly baked and delicious! I''ll definitely be making it again and again. I also agree with a previous comment that you don''t need to add anything to it, just eat it the way it is. YUM!

This was the easiest most delicious almond bread recipe however ever had. It''s only one bad thing about it it tastes so good but you can only eat a little piece of it that''s very difficult to do.

Hi. I have glanced at the reviews and I''d like to point out that the amount of Almond flour quoted in two of your answers are contradictory: the first says 2 1/4 cups, the second says 2 1/2! Pleas can you clarify how much Ready-made Almond Flour can be substituted for Whole Almonds? Many thanks for all your hard work in testing and providing all your great recipes.
