For meethe chawal
 

  1. To make meethe chawal, clean, wash and soak the basmati rice in enough water for 30 minutes. Drain well and keep aside.
  2. Heat ghee in a pressure cooker, add cloves, black peppercorns, cinnamon, cardamoms, almonds, cashew nuts, raisins and coconut slices.
  3. Sauté on slow flame for a minute, while stirring occasionally.
  4. Add soaked rice, sugar, saffron, orange food colour and 2 cups of water.
  5. Mix well and pressure cook for 3 whistles.
  6. Allow the steam to escape before opening the lid.
  7. Serve meethe chawal hot.
