Rice noodles, an important part of the chinese cuisine are made with rice flour and are chewier in comparison. They are easier to prepare as they do not require to be boiled over a flame. They can be used in a variety of chinese dishes- as filling for spring rolls, as accompaniment to main dishes and in soups and salads.
Method- Place the noodles in a large bowl.
- In another pan, boil about 2 liters of water with the salt and oil. When it comes to a boil, pour the water over the raw noodles. Cover and keep aside for 10 minutes or till the noodles are soft.
- Drain and use as required.
- The oil is added is prevent the noodles from sticking together.
