Ingredients

For Rava and Vegetable Dhokla
1 1/2 cups semolina (rava / sooji)
1/4 cup finely chopped and boiled mixed vegetables
1/2 cup curd (dahi)
1 1/2 tsp ginger-green chilli paste
1 tbsp oil
salt to taste
1 1/2 tsp fruit salt
1 tbsp oil
1 tsp mustard seeds ( rai / sarson)
1 tsp sesame seeds (til)
a pinch of asafoetida (hing)

    For rava and vegetable dhokla
  1. To make rava and vegetable dhokla, combine the semolina, mixed vegetables, curds, ginger-green chilli paste, oil, salt and 1½ cups of water in a deep bowl and mix well to make a smooth batter. Cover and keep aside to ferment for atleast 30 minutes.
  2. Just before steaming the dhoklas, add the fruit salt and 2 tsp of water over the batter. When the bubbles form, mix gently.
  3. Divide the batter into 2 equal portions.
  4. Pour one portion of the batter immediately into a 175 mm. (7”) greased thali and shake the thali clockwise to spread it evenly to make an even layer.
  5. Steam in a steamer for 10 minutes or till the dhoklas are cooked.
  6. Repeat steps 4 and 5 to make 1 more thali. Keep aside.
  7. Heat the oil in a small pan, add the mustard seeds, sesame seeds and asafoetida and sauté on a medium flame for a few seconds.
  8. Pour the tempering over the prepared rava and vegetable dhokla.
  9. Cut the rava and vegetable dhokla into equal sized pieces and serve hot with green chutney.

For The Rava Vegetable Dhokla Batter

  1. In a microwave safe bowl, take the carrots, French beans and some green peas.
  2. Pour enough water to boil them.
  3. Cover with a lid and microwave on HIGH for 7 minutes.
  4. Drain the vegetables and keep aside.
  5. For the batter of quick Rava Vegetable Dhoklas, in a deep bowl, put the semolina.
  6. To this, add the boiled mixed vegetable viz. carrots, French beans and green peas. Also, you can put leafy vegetables like spinach, methi or coriander in the vegetable dhokla recipe.
  7. Add the curd. Alternatively, you can add buttermilk. Use slightly sour curd for flavor similar to the Gujarati khatta dhokla.
  8. Also, add the ginger-green chilli paste.
  9. Add the oil.
  10. Add salt and 1½ cups of water.
  11. Mix well to make a smooth lump-free batter.
  12. Cover and keep aside to soak for atleast 30 minutes. The Rava Vegetable Dhoklas is an instant recipe as it does not require time for fermenting.

For Steaming The Rava Vegetable Dhokla

  1. For steaming The Rava Vegetable Dhokla, add enough water in steamer and heat it over medium flame.
  2. Grease a 175 mm. (7”) diameter thali with oil.
  3. Just before steaming the Rava Vegetable Dhoklas, add the fruit salt. We have used a neutral flavored fruit salt here.
  4. Add 2 tsp of water over the batter. This helps in the activation of fruit salt.
  5. When the bubbles form, mix gently. You do not want the air bubbles to escape.
  6. Divide the Rava Vegetable Dhoklas batter into 2 equal portions.
  7. Pour one portion of the batter immediately into a 175 mm. (7”) greased thali. Don’t keep the dhokla batter idle for a long time after adding fruit salt or else you will get hard dhoklas.
  8. Shake the thali clockwise to spread it evenly to make an even layer.
  9. Steam in a steamer for 10 minutes or till the Rava Vegetable Dhoklas are cooked. Always steam the dhoklas over medium flame to get spongy texture.
  10. Insert knife or toothpick in the center and check if it comes out clean. If it does, then it our rava dhokla are ready. If not, then steam it for 2-3 minutes more.
  11. Repeat steps 7 to 10 and make 1 more thali of Rava Vegetable Dhokla, Sooji Vegetable Dhoklas. Keep aside.

For The Tempering Of Rava Dhokla

  1. For the tempering of Rava Vegetable Dhoklas, heat the oil in a small pan.
  2. Add the mustard seeds.
  3. Add the sesame seeds. These seeds provide a nice aroma and flavor to the dhokla.
  4. Add the asafoetida and sauté on a medium flame for a few seconds.
  5. Pour the tempering over the prepared Rava Vegetable Dhoklas with the help of a spoon. The tempering is totally optional.
  6. Cut into equal sized pieces. Once the Rava Vegetable Dhoklas is cooked, allow it to cool before you cut into pieces.
  7. Serve the Rava Vegetable Dhoklas hot with green chutney.

Cud u plz post some variation in Vagharela dhokla, which cud b made wth some left over khatta dhokala. As if we do wth left over steamed idli.

Tarla Dalal    Hi Bijal, You can make vagharela dhokla by making a tempering of rai and hing, then add the dhoklas, add powdered sugar, lemon juice, coriander, chilli powder and salt and cook , it taste v good. I make this recipe very often to carry it in the tiffin. They are quick and filling. It is very helpful when you are in a hurry and want something quick, filling and tasty. The veggies add a crunch to the dhokla giving it a nice mouthfeel. Have it with green chutney, it will taste even better.
