Carrot and spring onions are by themselves a very successful duo because the contrast of orange and green stands out against the white sauce background.

Method- To make baked carrot and spring onion open toast, divide the topping into 6 equal portions. Keep aside.
- Divide each roll horizontally into two parts. Brush both the sides of each halve with a little melted butter.
- Bake the brushed hot dog rolls in a pre-heated oven at 200°c (400°f) for 5 to 7 minutes.
- Spread ½ tsp of hot and sweet chilli sauce evenly over each hot dog halve.
- Spread a portion of the prepared topping on each toasted halve.
- Bake them in a pre-heated oven at 200°c (400°f) for 10 minutes.
- Serve immediately.

- Heat 1 tbsp of butter in a broad non-stick pan, add 1 ½ tbsp of plain flour and cook on a slow flame for 30 seconds, while stirring continuously.
- Add 1 cup of milk, salt and pepper powder, mix well and cook on a medium flame for 2 minutes, or till the sauce thickens, while stirring continuously.
- Switch off the flame and keep aside.
- In a deep bowl, take thickly grated carrot.
- Add chopped spring onions whites and greens. The combination of sweet carrots and crunchy spring onion works really well together.
- Now add the deseeded and chopped tomatoes.
- Add the prepared thick white sauce.
- Finally, add finely chopped green chillies and salt to taste. Adjust the amount of chillies according to how spicy you want.
- Mix well and your Baked Carrot and Spring Onion Open Toast topping is ready! Divide the topping into 6 equal portions. Keep aside.

- Spread a portion of the prepared topping on each toasted halve.
- Bake them in a pre-heated oven at 200°C (400°F) for 10 minutes.
- Repeat step 7 to 13 and make 4 more Baked Carrot and Spring Onion Open Toast.
- Serve immediately. They taste amazing as it is!
