Sambhariyu shaak is a traditional gujarati stuffed vegetable dish. This dish can be customised to your liking by using any vegetables that you and your family prefer. However, the vegetables are to be selected carefully to make sure they look good and get cooked evenly. Pressure cooking is the easiest method to make this recipe as it uses less oil, takes less time and cooks evenly. Make sure you add the besan in the filling to make the veggies dry.

Ingredients

2 small brinjal (baingan / eggplant)
12 tendli (tendli)
6 baby potatoes , peeled
1/2 cup sweet potatoes , peeled and cut into big cubes
1 cup purple yam (kand) , peeled and cut into big cubes
4 tbsp oil
1/4 tsp asafoetida (hing)
1/2 tsp sugar
1/2 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1/2 tsp coriander-cumin seeds (dhania-jeera) powder
salt to taste

To Be Mixed Together For The Filling
6 tbsp grated coconut
6 tbsp chopped coriander (dhania)
5 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp turmeric powder (haldi)
2 tsp chilli powder
3 tsp sesame seeds (til)
1/2 tsp garam masala
3 tbsp besan (bengal gram flour)
1 tbsp lemon juice
1 tbsp ginger-green chilli paste
4 tbsp oil
3 tbsp sugar
salt to taste

Method
  1. Remove the brinjals stalks and ends of the ivy gourds.
  2. Make criss-cross slits on the potatoes and brinjals, taking care not to separate the segments. Keep aside.
  3. Slit each ivy gourd lengthwise taking care not to separate the segments. Keep aside.
  4. Divide the prepared filling into 2 equal portions.
  5. Stuff the ivy gourd, brinjals and potatoes with a portion of the filling and keep aside.
  6. Combine the sweet potatoes, purple yam and the remaining portion of the filling in a bowl and mix well. Keep aside.
  7. Heat the oil in a pressure cooker, add the asafoetida and sauté a medium flame for 30 seconds.
  8. Add all the prepared vegetables, sugar, chilli powder, turmeric powder, coriander-cumin seeds powder, salt and ¾ cup of water, mix gently and pressure cook for 2 whistles.
  9. Allow the steam to escape before opening the lid.
  10. Serve hot.

Sambhariyu Shaak,it's really very very tasty and mouthwatering.we use to do it but with surti papdi,its great to have such a tasty shaak withuot papdi and that's too with very little oil.Thanks Tarlaji,continue giving this type of more recipes
