A bhurji is always a good addition to any menu because most people love its balanced flavours and texture. This bhurji or cauliflower and paneer is prepared with a masaledar paste of green chillies and dry spices, pepped up with tangy tomato puree. Serve the versatile Cauliflower Paneer Bhurji with whole wheat bread, roti, paratha or rice.

Ingredients


To Be Ground Into A Paste
1 tbsp chopped green chillies
2 tsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
2 cloves (laung / lavang)
2 cardamoms
6 to 8 peppercorns (kalimirch)
1 tsp cumin seeds (jeera)
1 tsp chilli powder

Other Ingredients
1/2 cup blanched tomato puree
2 tsp oil
1/4 cup finely chopped onions
2 cups grated cauliflower
1/2 tsp turmeric powder (haldi)
1/2 cup crumbled low-fat paneer
salt to taste

For The Garnish
1 tbsp chopped coriander (dhania)

Method
  1. Heat the oil in a non-stick kadhai, add the onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the paste and sauté on a medium flame for 3 to 4 minutes.
  3. Add the cauliflower, turmeric powder and ½ cup of water and mix well. Cover with a lid and cook on a medium flame for about 10 to 12 minutes or till the cauliflower is tender, while stirring occasionally.
  4. Remove the lid and stir for 2 to 3 minutes so all the water dries up.
  5. Add the paneer and mix well.
  6. Add the tomato purée and salt and cook on a medium flame for 2 to 3 minutes.
  7. Serve hot garnished with coriander.

If your fear is about the pungent taste that could come from the grated cauliflower- then i will strongly recommend you to set it side and go ahead and stir up this dish.. it is heavenly.. the cardamom gives a very unique taste to this dish making it thoroughly enjoyable..!!!

Grated cauliflower, crumbled low fat paneer and pureed tomatoes cooked in a strong spice to form a healthy bhurji.
