Baked Vegetables In Tomato Sauce

Ingredients


2 potatoes, boiled
1 brinjal (baingan / eggplant)
1 1/2 cups mixed vegetables
1 chopped onion
1 tbsp plain flour (maida)
3/4 cup tomato ketchup
1/2 tsp chilli powder
1 tsp chilli sauce (optional)
1 to 2 tsp sugar
1 1/2 tbsp butter
salt to taste
ghee for deep frying

For the topping
1 1/4 cups White Sauce (For Baking)
4 tbsp grated cheese
a little butter

Method
  1. Slice the potatoes and deep fry in ghee.
  2. Slice the brinjals and deep fry in ghee.
  3. Heat the butter and fry the onion for 1 minute.
  4. Add the flour and fry again for 1/2 minute.
  5. Add the tomato ketchup, 1 teacup of water, chilli powder, chilli sauce, sugar and salt and mix again.
  6. Add the mixed vegetables and cook for a little while.

How to proceed

  1. Make a layer of half of the potatoes and brinjals in a greased baking dish.
  2. Spread the vegetable mixture on top and make a second layer of the balance potaotes and brinjals.
  3. Next, spread the white sauce and sprinkle the grated cheese on top.
  4. Dot with butter and bake in a hot oven at 230 degree C (450 degree F) for 20 minutes.
  5. Serve hot.

Tips
  1. Take french beans, carrots, green peas as the mixed vegetables.
