Suran Pakoda Video. A mixture of yam and besan perked up with peanuts, red chillies and onions is used to make scrumptious pakodas, which have a unique crunch brought about by the yam. A teaspoon of fennel seeds along with coriander and curry leaves give the Yam Fritters a lip-smacking flavour and tantalising aroma. .

For Yam Fritters
1 cup grated yam
1/2 cup freshly grated coconut
1/4 cup roasted peanuts
3 whole dry kashmiri red chillies , broken into pieces
1 tsp fennel seeds (saunf)
1/2 tsp turmeric powder (haldi)
1/2 cup besan (bengal gram flour)
1/4 cup finely chopped onions
2 tbsp chopped curry leaves (kadi patta)
2 tbsp finely chopped coriander (dhania)
salt to taste
oil for deep-frying

  1. Combine the yam, red chillies, peanuts, coconut, fennel seeds and turmeric powder in a mixer and blend it to a coarse mixture using ½ cup of water.
  2. Transfer the mixture into a deep bowl, add the besan, onion, curry leaves, coriander and salt and mix well.
  3. Heat the oil in a deep non-stick kadhai and drop small spoonful of the mixture into the hot oil, a few at a time, on a medium flame till they turn golden brown in colour from all the sides. Drain on absorbent paper.
  4. Serve immediately.
