For vegetable panchmel khichdi- To make vegetable panchmel khichdi, clean, wash and soak the rice and dals in a deep bowl for 15 minutes. Drain and keep aside.
- Heat the ghee in a pressure cooker and add the cumin seeds.
- When the seeds crackle, add the garlic and ginger and sauté on a medium flame for 1 minute.
- Add the onions and sauté on a medium flame for 1 minute.
- Add the cabbage, cauliflower, potatoes and green peas and sauté on a medium flame for 2 minutes.
- Add the chilli powder, turmeric powder, coriander-cumin seeds powder, tomatoes, rice, dals, salt and 3 cups of hot water, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Serv the vegetable panchmel khichdi hot with fresh curds and papad.

Khichdi is a staple food in our country. Generally, it is made with a combination of rice and lentils. You can substitute/mix and match to form a myriad of khichdi recipes using various dals, grains, pulses etc. The health quotient can be improved with the addition of vegetables and use of healthy grains like jowar, bajra, wheat etc. Khichdi is commonly known as sick man’s food because of it’s simple yet strength giving effect. Lehsun ki chutney, freshly chopped onions, papad, pickles, curd and kadhi are some popular accompaniments served with a khichdi. For the Vegetable Panchmel Khichdi, clean the rice & put in a strainer. Wash the rice. You can substitute rice with brown rice or broken wheat to make it more nutritious. Alternatively, you could use tukda chawal or short grained rice too.

Drain the rice and transfer into a deep bowl.

Pick and clean the masoor dal, chana dal (split bengal gram), yellow moong dal (split yellow gram) and toovar dal.Combine the dals, mix well and rinse them with water.

Transfer the panch dals into the rice bowl.

Immerse under enough water.

Mix well and soak the rice and dals for 15 minutes. Don’t forget to cover with a lid. If time provides soak everything for 2-3 hours.

After 15 minutes, drain and keep aside.

Meanwhile, wash the vegetables and peel skin from onion, potato.Chop all vegetables measure and keep ready.

For preparing the Vegetable Panchmel Khichdi, heat the ghee in a pressure cooker. Making the panchmel khichdi in the pressure cooker saves time & is much faster. But, if you do not have a pressure cooker, you can cook in a pan with a lid.

When the ghee is moderately hot, add the cumin seeds. To make it vegan, make use of oil instead of ghee.

Add the soaked rice, dals and salt.

Pour 3 cups of hot water. You can add more water to get a loose consistency khichdi. Hot water helps in cooking the Panchmel Khichdi faster. Mix well and pressure cook for 2 whistles. Adjust the number of whistles depending on your family’s preferences and your cooker type.

Allow the steam to escape naturally before opening the lid. Mix once. Also, at this stage you can pour a little ghee and enhance the taste of vegetable panchmel khichdi | mixed dal and vegetable khichdi | lentil vegetable khichdi |.
