This nutritious Vegetable Panchmel Khichdi is made of 4 dals and rice pressure cooked with a generous helping of crunchy vegetables, tomatoes and spice powders. Mildly spiced Panchmel khichdi which can be had as a one dish meal . Cooking the khichdi in a pressure cooker makes this a quick and easy recipe to make.
Veg Panchmel Khichdi goes well with curd or a glass of buttermilk or mint chaas. Some prefer to have a kadhi with the Panchmel Khichdi and some mango pickle on the side.

Ingredients
For Vegetable Panchmel Khichdi
1 1/2 cups long grain rice (basmati chawal)
1 tbsp masoor (split red lentil) dal
1 tbsp chana dal (split Bengal gram)
1 tbsp yellow moong dal (split yellow gram)
1 tbsp toovar (arhar) dal
2 tbsp ghee
1 tsp cumin seeds (jeera)
1 tsp finely chopped garlic (lehsun)
1 tsp grated ginger (adrak)
1/4 cup onion cubes
1/2 cup cabbage cubes
3/4 cup cauliflower florets
1/2 cup potato cubes
1/2 cup green peas
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
2 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 cup chopped tomato
salt to taste
For Serving With Vegetable Panchmel Khichdi
fresh curd (dahi)
Method
- To make vegetable panchmel khichdi, clean, wash and soak the rice and dals in a deep bowl for 15 minutes. Drain and keep aside.
- Heat the ghee in a pressure cooker and add the cumin seeds.
- When the seeds crackle, add the garlic and ginger and sauté on a medium flame for 1 minute.
- Add the onions and sauté on a medium flame for 1 minute.
- Add the cabbage, cauliflower, potatoes and green peas and sauté on a medium flame for 2 minutes.
- Add the chilli powder, turmeric powder, coriander-cumin seeds powder, tomatoes, rice, dals, salt and 3 cups of hot water, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Serv the vegetable panchmel khichdi hot with fresh curds and papad.

- Khichdi is a staple food in our country. Generally, it is made with a combination of rice and lentils. You can substitute/mix and match to form a myriad of khichdi recipes using various dals, grains, pulses etc. The health quotient can be improved with the addition of vegetables and use of healthy grains like jowar, bajra, wheat etc. Khichdi is commonly known as sick man’s food because of it’s simple yet strength giving effect. Lehsun ki chutney, freshly chopped onions, papad, pickles, curd and kadhi are some popular accompaniments served with a khichdi. For the Vegetable Panchmel Khichdi, clean the rice & put in a strainer. Wash the rice. You can substitute rice with brown rice or broken wheat to make it more nutritious. Alternatively, you could use tukda chawal or short grained rice too.

Drain the rice and transfer into a deep bowl.

Pick and clean the masoor dal, chana dal (split bengal gram), yellow moong dal (split yellow gram) and toovar dal.Combine the dals, mix well and rinse them with water.

Transfer the panch dals into the rice bowl.

Immerse under enough water.

Mix well and soak the rice and dals for 15 minutes. Don’t forget to cover with a lid. If time provides soak everything for 2-3 hours.

After 15 minutes, drain and keep aside.

Meanwhile, wash the vegetables and peel skin from onion, potato.Chop all vegetables measure and keep ready.

For preparing the Vegetable Panchmel Khichdi, heat the ghee in a pressure cooker. Making the panchmel khichdi in the pressure cooker saves time & is much faster. But, if you do not have a pressure cooker, you can cook in a pan with a lid.

When the ghee is moderately hot, add the cumin seeds. To make it vegan, make use of oil instead of ghee.

When the seeds crackle, add garlic.

Add ginger and sauté on a medium flame for 1 minute. Ginger-garlic enhance the flavour of the Panchmel Khichdi recipe

Add the onions and sauté on a medium flame for 1 minute.

Add the cabbage.

Add the cauliflower. Add whichever vegetables you like or are easily available.

Add the potatoes. Capsicum, carrots, sweet corn, french beans are some other vegetables which you can add to the Vegetable Panchmel Khichdi.

Add green peas and sauté on a medium flame for 2 minutes.

Add the chilli powder.

Add the turmeric powder.

Add the coriander-cumin seeds powder.

Add the tomatoes.

Add the soaked rice, dals and salt.

Pour 3 cups of hot water. You can add more water to get a loose consistency khichdi. Hot water helps in cooking the Panchmel Khichdi faster. Mix well and pressure cook for 2 whistles. Adjust the number of whistles depending on your family’s preferences and your cooker type.

Allow the steam to escape naturally before opening the lid. Mix once. Also, at this stage you can pour a little ghee and enhance the taste of vegetable panchmel khichdi | mixed dal and vegetable khichdi | lentil vegetable khichdi |.
