Ingredients

For The Stuffing
1/2 cup crumbled feta cheese
4 tbsp finely chopped basil
2 tbsp olive oil
salt and to taste

Other Ingredients
8 brown bread slices
butter for spreading
16 thinly sliced tomatoes
Method

For the stuffing
    For the stuffing
  1. Combine the feta cheese, basil, olive oil, salt and pepper in a bowl and mix well.
  2. Divide the stuffing into 2 equal portions and keep aside.

How to proceed

  1. Place 2 bread slices on a clean, dry surface and butter the bread slices lightly.
  2. Place 4 tomato slices on 1 bread slices, sprinkle salt and pepper.
  3. Place 1 portion of the prepared stuffing on it and spread it evenly.
  4. Cover with another buttered side facing downwards and cut into triangles.
  5. Repeat steps 1 to 4 to make 3 more sandwiches.
  6. Serve immediately.

Feta, basil and tomatoes make a nice combination for a salad. I toasted mine and skipped putting butter in the inside.
