Ingredients
For The Stuffing
1 1/2 cups boiled hakka noodles
2 tbsp oil
1 tbsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
3/4 cup sliced onions
3/4 cup shredded cabbage
3/4 cup carrot juliennes
3/4 cup capsicum juliennes
1/2 cup finely chopped spring onion whites and greens
3 tbsp Schezwan Sauce
1 tbsp tomato ketchup
1 tsp soy sauce
1 tsp red chilli sauce
1/2 tsp chaat masala
1 tsp vinegar
salt and

2 cups dosa batter
4 tbsp butter for cooking
4 tbsp Schezwan Sauce
4 tbsp grated processed cheese
1/4 cup finely chopped spring onion greens for sprinkling
For Serving
Method
For the stuffing
- To make spring roll dosa recipe, heat the oil in a broad non-stick pan, add garlic and ginger, sauté on a medium flame for a few seconds.
- Add the onions and sauté on a medium flame for 1 minute.
- Add the cabbage, carrot and capsicum and sauté on a medium flame for 2 minutes.
- Add the spring onion whites and greens, hakka noodles, schezwan chutney, tomato ketchup, soya sauce, chilli sauce, vinegar, chaat masala, salt and pepper.
- Mix well and cook on a medium flame for 3 to 4 minutes, while stirring continuously.
- Divide the stuffing into 4 equal portions. Keep aside.
How to proceed
- Heat a non-stick tava (griddle), grease with 1/4 tsp oil and sprinkle a little water on the tava, wipe it off gently using a muslin cloth.
- Pour a ladleful of the batter on hot tava and spread it in a circular motion to make a 225 mm. (9 inch) diameter thin dosa.
- Add 1 tbsp butter and 1 tbsp of schezwan chutney over the dosa and spread it evenly. Cook on a medium flame till the dosa turns light brown in colour and crisp.
- Spread a portion of the stuffing over the dosa, add grated cheese and spring onion greens.
- Cook on a medium flame for 1 minute. Cut the dosa vertically in 3 equal portions and fold over to make a spring roll.
- Repeat steps 1 to 5 with the remaining batter and stuffing to make 3 more dosas.
- Serve spring roll dosa immediately with coconut chutney and sambar.

I love Spring Dosa as the combination of noodles along with vegetables and sauces in a dosa taste fab !! I love the way it is made on roadsides with hot sambhar and chutney
