Cucumber is mixed and matched with a wide selection of fruits, to make this sweet and sour Indian fruit raita. A slightly different spicing—of mustard powder and cumin seeds powder is used to pep up the raita. 

 

 

 

To make fruit and vegetable raita, combine all the ingredients along with the dressing in a deep bowl and mix well. Refrigerate for at least an hour. Serve chilled.

 

 

Contrasting coloured fruits in thick luscious curd, set a very upbeat mood right at the beginning, with their attractive appearance and irresistible taste. Apples can be used unpeeled in simple mix fruit raita as their red coloured dotted in white curd looks charming. 

 

The combination of thick curd along with little fresh cream, gives a luscious feel to the creamy fruit raita. The slight sharp tinges of mustard powder are balanced out with powdered sugar very well. The myriad flavours together with the tempting texture makes this a fabulous accompaniment which is surely worth a try.

 

Tips for fruit and vegetable raita. 1. Remember to chop the bananas and apples just before mixing to avoid blackening. 2. Use of thick curd is a must to get the perfect creamy texture of the raita. 3. If you do not have fresh cream, use hung curd whisked well with very little milk.
