aloo palak roti is a Punjabi style aloo palak roti which is a perfect breakfast roti. We have used the most basic ingredients in making of aloo palak roti and the addition of aloo makes these rotis melt in the mouth. The dough of potato spinach roti is kneaded just how its done for Gujarati thepla.

For aloo palak roti
 

  1. To make aloo palak roti, combine all the ingredients in a deep bowl, mix well and make a soft smooth dough using water.
  2. Divide the dough into 12 equal portions.
  3. Roll out each portion of the dough into a 150 mm. (6”) diameter circle with the help of a little whole wheat flour.
  4. Heat a non-stick tava (griddle) and cook the roti using 1 tsp of oil , till golden brown spots appear on both the sides.
  5. Repeat with the remaining dough to make 11 more rotis.
  6. Serve the aloo palak roti hot with curds and pickle of your choice.

    1. Roti is a popular Indian flatbread eaten with subzi, curries and gravies for lunch or dinner. While mostly it is made with whole wheat flour and salt, you can use a number of flour and spices to make a variation. Also, you can add in some chopped vegetables to give it a nice mouthfeel and flavor. The addition of paneer or oats also helps in making it more wholesome. How to make aloo palak roti

 

    1. To prepare aloo palak roti |  Punjabi style aloo palak roti | potato spinach roti | in a deep bowl, take boiled, peeled and mashed potatoes. While making any paratha or roti using boiled potatoes, ensure they are not overcooked. Overcooked potatoes tend to absorb extra water making dough mushy and difficult to roll.
    2. Add finely chopped spinach. Ensure that the veggies are either finely chopped or grated so that you can easily roll the aloo palak roti without breaking. If you detest the mouthfeel of chopped spinach then add spinach puree.
    3. Add whole wheat flour.
    4. Add besan. Alternatively, you can even add jowar, bajra, nachni atta to fortify the aloo palak roti dough.
    5. Add salt to taste.
    6. Add fresh curd. It not only helps in making the aloo palak roti soft but also increases the nutrient quotient with an addition of calcium.
    7. Add finely chopped green chillies. Add more or less as per the spice level you like. Skip the green chilli, if you are serving kids.
    8. Add turmeric powder.
    9. Add oil.
    10. Combine all the ingredients in a deep bowl.
    11. Mix well and make a soft smooth dough using little water.
    12. Divide the aloo palak roti dough into 12 equal portions.
    13. Roll out a portion of the dough into a 150 mm. (6”) diameter circle with the help of a little whole wheat flour.
    14. To cook aloo palak roti heat a non-stick tava (griddle) and place the aloo palak roti carefully.
    15. Cook aloo palak paratha using 1 tsp oil till golden brown spots appear on both the sides. You may use butter or ghee to cook the aloo palak paratha.
    16. Flip and cook the aloo palak roti until golden brown in color from both sides. Press it gently using a spatula while roasting.
    17. Remove the potato spinach roti on a plate.
    18. Repeat with the remaining dough to make 11 more alu palak rotis.

These rotis were very easy to make. I ate it with curds and pickle and it was yumm...instead of palak at times i even add coriander or phudina and it taste equally nice....
