Method

Making quinoa dosa.

  1. Soak the urad dal in enough water for 1 hour. Drain well.
  2. Blend in a mixer to a smooth paste using ½ cup of water.
  3. Put the urad dal paste in a big bowl. Add 1/2 cup quinoa flour, 1/4 cup whole wheat flour (gehun ka atta), salt to taste and ¾ cup of water and  mix well using a whisk so no lumps remain.
  4. Heat a non-stick tava (griddle), sprinkle a little water on the tava (griddle) and wipe it off gently using a cloth.
  5. Pour a ladleful of the batter on it and spread it in a circular motion to make a 150 mm. (6”) diameter thin circle.
  6. Smear a little ghee over it and along the edges. You can also use butter or oil to roast the dosa.
  7. Cook the dosa over medium heat until both sides are golden brown.

  8. Fold over to make a semi-circle or a roll.

  9. Repeat with the remaining batter to make 7 more dosas.

    1. To make quinoa dosa recipe | healthy quinoa dosa | quinoa urad dal and whole wheat flour dosa | Take a deep bowl and put the 1/4 cup urad dal (split black lentils) into it.

    2. Add enough water to soak the urad dal.

    3. Cover with a lid and keep aside to soak for 1 hour.

    4. Drain the urad dal using a strainer.

    2. Add 1/2 cup water.

    3. Blend to a smooth paste.

    4. Put the urad dal paste in a big bowl. Urad dal, when ground into a paste, contributes a sticky, viscous quality to the batter. This helps bind the other ingredients together, which is especially important when using flours like quinoa, which may not have the same binding properties as rice. It helps in getting a smoother batter.

    5. Add 1/2 cup quinoa flour. Quinoa is a complete protein, meaning it contains all nine essential amino acids. This significantly increases the protein content of the dosa compared to traditional rice-based versions. Quinoa flour adds a slightly nutty and earthy flavor to the dosa, giving it a unique taste compared to the mild flavor of rice.

    6. Add 1/4 cup whole wheat flour (gehun ka atta). Whole wheat flour provides more binding and structure to the batter, making it easier to spread and cook into a stable dosa. It adds gluten (unless you are specifically making a gluten-free version), which helps hold the dosa together.

    7. Add salt to taste. Change to low salt for blood pressure control.

    8. Add ¾ cup of water. 

    9. Whisk well for a lump free batter.

This recipe is healthy and requires just no fermentation so can be made easily for breakfast, they have to be served immediately to enjoy them.
