Method
For making cherry compote
- Combine chopped cherries, castor sugar, cornflour and ½ cup water in a broad non-stick pan.
- Cook on a medium flame for 8 to 10 minutes, while stirring it continuously.
- Switch off the flame, once the cherry sauce becomes thick and luscious.
- Remove in a bowl and keep aside to cool completely.
For making the cake
- To make black forest cake using eggs recipe, combine ¼ cup powdered sugar and 1/3 cup water in a small bowl, mix well and keep aside.
- Place the cake on a clean, dry turntable and make marking using a serrated knife to cut it horizontally into 3 equal layers. Keep aside.
- Apply little whipped cream on the surface of the board, place the middle layer of the cake at the bottom.
- Apply the sugar syrup evenly over the layer using a brush. Apply 2 tbsp of chocolate sauce and spread it gently using a palette knife.
- Apply ½ cup whipped cream and spread it evenly using a palette knife.
- Put 1 tbsp of cherry compote mixture and spread it evenly over the cream.
- Sprinkle some grated chocolate and put the top layer of the cake upside down over the whipped cream. Press it gently.
- Repeat steps 4 to 7 to make 1 more cake layer.
- Place the last layer of the cake over the whipped cream and press it gently.
- Apply little whipped cream on the top and on the sides to cover the cake with thin layer of icing
- Refrigerate the cake for at least ½ hour. This is known as crumb coating, where the crumbs of the cake set well and don't lose during the cake decorating process.
How to proceed
- Apply whipped cream on the top and on the sides of the cake.
- Cover the cake with the icing from all the sides using a palette knife or scrapper.
- Apply grated chocolate gently on the sides of the cake.
- Make a whipped cream design on the top circumference of the cake using a star nozzle.
- Garnish with cherry. Refrigerate the cake again for ½ hour to 1 hour.
- Serve black forest cake chilled.
