Ma''am, I am a Maharashtrian and a die hard lover of khata dhokla. However, until now, I could never make perfect dhoklas; they would either be hard or batter wouldn''t be fermented properly. Your recipe gives me perfect doklas, just as I love. All your recipes are awesome and perfect too. Small query that i had was whether the butter is used to make them soft? Or some other reason?

Tarla Dalal    Hi, Yes adding butter to the batter makes soft, and helps to maintain moisture in the dhokla. This a traditional way to make these dhokla.

Is it ok if we do not add white butter...in that case do we change the quantity of oil we add to the batter .pls reply

It's Khatta and a classic Gujrati Dhokla. Have it often with dinner or as a morning breakfast. Goes well in the morning as it could be slightly on the high cal side and will be absorbed quickly in the morning due to a higher metabolic rate at that time.
