PERFECTLY COOKED PASTA

lways take a large quantity of water to cook pasta. Bring the water to a boil in a large vessel. Then add salt, a few drops of oil and finally the pasta. This helps the pasta to cook without sticking to each other. Stir once and let it cook in an uncovered pan. Different pastas have different cooking times as they differ in shape and thickness. Perfectly cooked pasta has to be tender but still firm when pinched. Once you arrive at this consistency, drain all the water from the pasta. Refresh immediately with cold water if the pasta seems a bit sticky. If you are not going to use the pasta at once, add a few drops of olive oil to it, toss gently and keep covered till ready to use. Not only does this prevent the pasta from sticking together, but also gives the pasta the unique aroma and flavour of olive oil. Pasta to be used in baked dishes should be cooked a little less than normal as it will get cooked again when baked with the final dish.
