Ingredients


For The Moong Sprouts Bhaji
1 1/4 cups boiled sprouted moong (whole green gram)
2 tsp butter
1 tsp oil
3/4 cup finely chopped onions
1 1/4 cups finely chopped tomatoes
1 tsp chilli powder
1 1/2 tsp finely chopped green chillies
1 tbsp pav bhaji masala
salt to taste
1 cup boiled , peeled and mashed potatoes
3/4 cup finely chopped and boiled mixed vegetables
2 tbsp finely chopped coriander (dhania)
1 tbsp lemon juice

For Buttered Pav
6 whole wheat ladi pav
3 tsp butter

For Serving
finely chopped onion
lemon wedges

Method

How to make moong sprouts bhaji

  1. To make the {span class="bold1"}moong sprouts pav bhaji{/span}, heat the oil and butter in a deep non-stick pan, add the onions and sauté on a medium flame for 2 minutes.
  2. Add the tomatoes, chilli powder, green chillies, pav bhaji masala, salt and ¼ cup of water, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  3. Add the potatoes and mixed vegetables, mix well and cook on a medium flame for 1 minute, while mashing using a masher.
  4. Add the sprouted moong, ½ cup of water, coriander, lemon juice and salt, mix well and mash using a potato masher and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.

How to make buttered pav

  1. Slit 2 pavs vertically and keep aside.
  2. Heat a non-stick tava (griddle), add 1 tsp of butter and slit open the pavs and place on it.
  3. Cook on a medium flame till they turn light brown from both the sides.
  4. Repeat steps 1 to 3 to cook more pavs. Keep aside.

How to serve

  1. Serve the bhaji hot with pavs, onions and lemon wedges.
