    1. what is idlis in coconut sauce made of? idlis in coconut curry is made from a coconut sauce consisting of 1 cup coconut milk (nariyal ka doodh), 1 tbsp oil, 1/2 tsp cumin seeds (jeera), 2 curry leaves (kadi patta), 1 slit green chilli, salt to taste, 1 tsp lemon juice, 1/2 tsp sugar and 2 tsp cornflour dissolved in 2 tbsp cold water. The idlis are made from idli batter and palak. See below image of list of ingredients for idlis in coconut sauce.

    1. To make coconut sauce ( coconut curry ), heat 1 tablespoon oil in a broad non-stick pan.
    2. Add 1/2 tsp cumin seeds (jeera).
    3. Let the seeds crackle.
    4. Add curry leaves (kadi patta).
    5. Add slit green chilli.
    6. Add 1 cup coconut milk (nariyal ka doodh).
    7. Add salt to taste. We added 1/4th tsp salt.
    8. Add 1 tsp lemon juice.
    9. Add 1/2 tsp sugar.
    10.  Make a cornflour-water mixture by dissolving 2 tsp cornflour in 2 tbsp cold water. The water must be cold. Mix well.
    11. Add cornflour-water mixture.
    12. Mix well.
    13. Cook on a medium flame for 1 to 2 minutes, while stirring continuously. Keep aside.

    1. Take a bowl of hot water.
    2. Put the 10 spinach (palak) leaves in enough hot water.
    3. Allow them to blanch for 1 to 2 minutes and then drain.
    4. Cool in cold water.
    5. Remove and put the spinach in a mixer.
    6. Blend  to a smooth purée.
    7. Keep aside spinach ( palak ) puree.
    8. In a bowl put 1 cup readymade idli batter.
    9. Add spinach purée.
    10. Add salt to taste. We added 1/4th tsp salt.
    11. Mix well.
    12. Grease the mini idli tray with oil.
    13. Pour a little batter into each greased mini idli mould, about 3/4th tsp of batter. Note that one tray makes 18 small idlis.
    14. Fill 3 to 4 mini idli trays with the batter.
    15. Put in an idli steamer and cover and cook with a lid.
    16. Steam in a steamer for 8 minutes.
    17. Cool and demould with a teaspoon.
    18. Keep aside palak idlis.

    1. Heat a sizzler plate or tava (griddle) till red hot.
    2. Pour  1/2 of the prepared coconut sauce over.
    3. Cook for 1 minute.
    4. Add the mini idlis.
    5. Add the remaining coconut sauce over it.
    6. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
    7. Put idlis in coconut sauce in a serving bowl.
    8. Serve immediately
tips for idlis in coconut sauce

 

    1. Make the palak idlis first and then the coconut sauce. The reason is that the coconut sauce can dry up.
    2. Serve the idlis in coconut sauce immediately once the coconut sauce is made. So if you want you can make the palak idlis in advance and do the coconut sauce at the end.

Besides looking immensely cute, they are delicious and healthy! the tadka is awesome and gives the dish added flavours and the aromatics!
