Wheat is a staple across India, especially in the northern parts, and few people are aware of suitable alternatives. With gluten related disorders becoming increasingly common in India, there is an urgent need for more gluten free food choices and hence the need for GLUTEN FREE RECIPES.
The Indian breads, Rotis and Parathas, which are part of everyday food in Northern India, are generally perceived to be the most difficult to prepare without wheat. We have therefore devoted two sections in this book to these recipes. Flours from various gluten free grains available in India like jowar, bajra, buckwheat, nachni, rajgira, soya etc. have been used. A separate section for children has been included as most of the gluten intolerant individuals who are diagnosed presently are children. Many of their favorite snacks like pizza, cake, sevpuri are made from wheat and hence are prohibited on a gluten free diet. Mothers can now try our gluten free options like Corn SevPuri, Bhakhri Pizza, Golpapdi, Jowar Banana Sheera. The section on snacks too has many recipes of interest to children, like Soya upma, Spicy Urad Dal Puri, Rice flour Chakli, Gluten free pasta etc.
