The procedure of making corn poha is very simple. All you need to do is boil corn and soak poha side by side and keep it ready!!

quick sweet corn poha is made with flat beaten rice, every Indian household has their own version of making poha. Corn poha can be quickly made and can be served on any occasion. Method of cooking is also very simple.

To make corn poha, take oil in a non-stick kadhai, add oil and mustard seeds. Add onions to give a crunch to the sweet corn poha. Add sweet corn. Further, add soaked and drained poha. Add sugar which is optional, salt, green chilli paste which can be adjusted according to your preference of spice, lemon juice and coriander. Mix well and lastly add milk, which helps in softening the poha. Our corn poha is ready to be served!! Before serving corn poha, garnish it with onions, tomatoes, sev and coriander leaves!

Ingredients

For Corn Poha
1/2 cup boiled sweet corn kernels (makai ke dane)
1 1/2 cups thick beaten rice (jada poha)
1 tbsp oil
1 tsp mustard seeds ( rai / sarson)
1/2 cup finely chopped onions
1/2 tsp turmeric powder (haldi)
2 tsp sugar
salt to taste
1 tsp slit green chillies paste
2 tsp lemon juice
2 tbsp finely chopped coriander (dhania)
2 tbsp milk

For The Topping
1/4 cup finely chopped tomatoes
1/4 cup finely chopped onions
1/4 cup sev
lemon wedge
Method

    For corn poha
  1. To make corn poha, clean, wash and drain the beaten rice and keep aside.
  2. Heat the oil in a broad non-stick pan and add the mustard seeds.
  3. When the seeds crackle, add the onions and sauté on a medium flame for 1 to 2 minutes or till they turn translucent.
  4. Add the sweet corn and sauté on a medium flame for 1 minute.
  5. Add the beaten rice, mix well and cook on a medium flame for 1 more minute, stirring continuously.
  6. Add the turmeric powder, sugar, salt, green chilli paste, lemon juice and coriander, mix well and cook on a medium flame for 1 to 2 minutes.
  7. Add the milk and mix well.
  8. Serve the corn poha hot topped with tomatoes, onions, sev and a lemon wedge.

Method for corn poha

  1. To make corn poha, heat the oil in a deep non-stick pan and add the mustard seeds. It is important to use this much oil so, the poha stays separated after cooking but, if you are health conscious you can surely reduce the amount of oil, but then it won’t taste that good.
  2. Add mustard seeds.
  3. When the seeds crackle, add onions. 
  4. Saute on a a medium flame for  1-2 minutes or till they turn translucent. 
  5. Add sweet corn.
  6. Saute on a medium flame for 1 minute.
  7. Add the washed, soaked and drained beaten rice.
  8. Mix well and cook on a medium flame for 1 more minute, stirring continuosly. 
  9. Add turmeric powder.
  10. Add sugar and salt.
  11. Add green chilli paste. Adjust the quantity according to your preference. 
  12. Add lemon juice.
  13. Add coriander for some freshness.
  14. Mix  corn poha well and cook on a medium flame for 1-2 minutes.
  15. Add the milk.

  17. Serve corn poha hot topped with tomatoes, onions, sev and a lemon wedge.
