The same old duo comes to you in an all-new form in this recipe. The addition of dry fruits and nuts like raisins and cashewnuts, and a sprinkling of toasted sesame seeds gives the Darbari Aloo Mutter Sabzi a rich mouth-feel and vibrant flavour.

Nevertheless, this recipe is as easy as any Aloo Mutter Sabzi, given that it is made using the microwave oven. It takes you less than 10 minutes to place this delightful dish on the table, once you are ready with all the ingredients.

Method

  1. Place the sesame seeds on a microwave-proof plate and microwave on high for 1 minute. Keep aside.
  2. Combine the oil, cumin seeds and onions in another microwave safe bowl and microwave on high for 2 minutes.
  3. Add the cashewnuts, raisins and 1 tablespoon water, mix well and microwave on high for 2 minutes.
  4. Add the tomato purée, garam masala, turmeric powder and chilli powder, mix well and microwave on high for 2 minutes.
  5. Add the potatoes, green peas, sesame seeds, sugar, salt and ¼ cup of water, mix gently and microwave on high for 2 minutes.
  6. Serve hot garnished with coriander.

This recipe is a blessing i discovered cooking in microwave is easier than gas cooking and the sabzis are more tastier, my new microwave justified the taste of Darbari sabzi it is rich and tasty...
