પ્રેશર કુકર અથવા ખુલ્લા પૅનમાં બનાવેલી બિરયાનીની સરખામણીમાં હાંડી બિરયાની ક્યારે પણ વધુ જ ચઢિયાતી ગણાય છે પછી ભલે એવું લાગતું હોય કે તેની રીતમાં એકસમાન સામગ્રીનો ઉપયોગ કરવામાં આવ્યો હોય. ફક્ત વાસણના ઢાંકણને ઘઉંની કણિક વડે અંદર બહારની હવા પેસે નહીં એવી રીતે બંધ કરી અંદરની સામગ્રીને બરોબર રાંધવા દેવું ....
