green pea and cucumber sandwich is a triple-decker feast prepared with buttered bread roundels packed with a green peas mixture and refreshing cucumber slices. You will love the blend of crunchy cucumber and nutty green peas laced with mayonnaise and chilli sauce as you bite into this sumptuous quick Indian bread snack.

The highlight of this pea cucumber sandwich is that it needs no accompaniment. The mayo lends a creaminess to the stuffing which kids love. If you wish, you can replace the cucumber with tomato slices.

To make green pea and cucumber sandwich, first make the green pea stuffing. Heat the oil in a broad non-stick pan, add the green peas, soda bi-carb and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Cool slightly, add the mayonnaise and chilli sauce and mix well. Then make the sandwich. Cut the bread slices into approx. 62 mm. (2½") diameter rounds with the help of a cookie cutter. Place 3 bread roundels on a flat, dry surface, apply a little butter and ½ tsp green chutney over them. Spread 1 portion of the green pea stuffing over 1 bread roundel and sandwich with another bread roundel with the buttered-chutney side facing upwards. Place 3 cucumber slices and sprinkle a little salt over it. Sandwich with the 3rd bread roundel with the buttered-chutney side facing downwards. Serve green pea and cucumber sandwich immediately.

For any kid’s party, be it a play date or a birthday party the visual appeal of any snack is the most important to attract kids. This peas cucumber mayo sandwich is a perfect example to prove this. Let them taste it and all the kids are sure to run for a second helping.

Tips for green pea and cucumber sandwich. 1. It's a kid’s fare, so make the chutney less spicy. 2. Use the discarded bread to make fresh bread crumbs to be used in some other starter or snack. 3. Keep the stuffing ready, but assemble the sandwich only close to the serving time.
