Mouth-watering and delicious italian preparation of cooked fettuccine with a healthy dose of spinach and a luscious cottage cheese sauce. A generous sprinkling of grated cheese before baking, ensures a perfect finish to the baked fettuccine with spinach in paneer sauce. Ingredients
1 1/2 cups cooked fettuccine
3/4 cup blanched and chopped spinach
1 tbsp oil
1/4 cup finely chopped onions
1 tsp finely chopped garlic (lehsun)
1 tsp finely chopped green chillies
salt and black peppercorns (kalimirch) powder to taste
1/4 cup milk
5 tbsp grated processed cheese

To Be Blended Into A Smooth Paneer Sauce
1 cup grated fresh paneer (cottage cheese)
1 cup milk
salt to taste
1/2 tsp nutmeg (jaiphal) powder

For The Garnish
1/2 tsp dry red chilli flakes (paprika)
Method
    Method
  1. Heat the oil in a broad non-stick pan, add the onions, garlic and green chillies and sauté on a medium flame for 1 minute.
  2. Add the spinach and salt and cook on a medium flame for 30 seconds, while stirirng occasionally.
  3. Add the fettuccine, paneer sauce and pepper, mix lightly and cook on a medium flame for 2 to 3 minutes, while tossing occasionally.
  4. Add the milk and 2 tbsp of cheese and mix well.
  5. Transfer the mixture into a baking dish, sprinkle the remaining 3 tbsp of the grated cheese evenly over it.
  6. Microwave on high for 4 to 5 minutes or bake in a pre-heated oven 180°c (360°f) for 15 minutes.
  7. Serve hot garnished with chilli flakes

baked fettuccine with spinach in paneer sauce..A little effort to put.. but the result is creamy saucy and cheesy.. The flavour of the garlic could be tasted in every bite..
