Jowar roti is an unleavened Indian flatbread which is made with minimum of ingredients, jowar flour and salt. jowar ki roti is famous and consumed more in the Western parts of India. Make jowar roti soft of hard depending on how you like it.
Jowar is one of the top 5 cereals in the world and is also one of the super foods with many health benefits. We have a very easy recipe using jowar that is Jowar roti also known as "Sorghum roti"
We have made this healhy jowar roti with jowar flour and little salt to taste. The only trick is kneading of the dough. All you need to do is take required water in a deep non stick pan get it to boil and add jowar flour to it. Mix well and let it cool. Once it has cooled down a little, knead into a soft dough. Make sure the dough has cooled down or you may burn your hands. Rolling the roti requires skills, traditionally jowar roti is rolled using hands but you can also use a rolling pin. Once, the jowar bhakri is rolled, place it on a tava, make sure you cook it on a medium flame flipping both the sides and then cooked on a open flame till it puff ups or until brown spots appear on both the sides. Remove it in a plate and smear with ghee.
Jowar roti is super rich in fibre, is gluten free, good for diabetics, heart, weight loss, high in magnesium, iron and also lowers blood pressure and cholesterol. We have used hot water for kneading the dough as it helps in getting the roti soft and even when not served for hours, it doesn't become hard or chewy. But you also need to make sure that you roll out the roti immediately after kneading the dough as if you would keep the dough for a long time, it will loose its moisture and would become splintery which would make rolling difficult. My grandmother would cook it on an earthen clay oven on a chulha which would give a smoky flavor to the roti. Whenever we cook jowar roti at home, i make any Maharashtrian sabzi to eat along.

For jowar roti- To make jowar roti, heat ¾ cup of water in a deep non-stick pan, switch off the flame, add the jowar flour and mix well. Keep aside to cool slightly.
- Transfer the mixture into a deep bowl and knead into a soft dough using 1 to 2 tbsp of water if needed.
- Divide the dough into 7 equal portions.
- Take a portion the dough, flatten it slightly and place it on a dusted rolling board and roll with your hands into a 125 mm. (5”) diameter circle.
- Heat a non-stick tava (griddle) on a medium flame and when hot, place the jowar roti gently over it.
- Cook it till small blisters appear on the surface. Turn over the jowar roti and cook for few more seconds.
- Cook the jowar roti on an open flame till it puffs up and brown spots appear on both the sides.
- Repeat steps 4 to 7 to make 6 more rotis.
- Serve the jowar roti immediately.

There are 3 ways to roll jowar roti. METHOD 1. Roll with your hands into a 125 mm. (5”) diameter circle. This is the traditional way the Maharshtrians roll their jowar roti with their hands.

Method 2 for rolling jowar roti. From step 8, we will roll the dough using a belan. You need to roll the roti very gently and keep using whole wheat flour to dust your roti while rolling. With a little patience you will get to roll it to 125 mm. (5”) diameter circle.

Method 3, step 1 for rolling jowar roti. Place a plastic sheet on the rolling board.

Method 3, step 2. Place the soft dough on the plastic sheet and cover it with another plastic sheet. NOTE : we will not require any whole wheat flour to use while rolling the soft dough.

Method 3, step 3. Roll the dough gently with a belan ( rolling pin). You will have to keep turning the plastic sheet while rolling.

Method 3, step 4. Take out the top plastic sheet. Remove the rolled dough with your hand. You can feel how soft the roti is. You are now set to cook your jowar roti.

Heat a non-stick tava (griddle) on a medium flame and when hot, place the jowar roti gently over it. Cook jowar roti | jowar ki roti | jowar bhakri | healthy jowar roti | sorghum roti | till small blisters appear on the surface and flip on the other side.

Turn over the roti and cook for 1 minute.

Cook it on an open flame till it puffs up and brown spots appear on both the sides.

For Bajra Roti
2 cups bajra (black millet) flour
1/4 cup whole wheat flour (gehun ka atta)
salt to taste
whole wheat flour (gehun ka atta) for rolling
4 tsp ghee for smearing
white butter
Method For bajra roti

Combine the bajra flour, whole wheat flour and salt in a deep bowl and knead into a soft dough using approx. ¾ cup of warm water.

Divide the dough into 8 equal portions.

Roll out a portion of the dough into a 150 mm. (6") diameter thick roti using a little whole wheat flour for rolling.

Heat a non-stick tava (griddle), place the roti over it and cook it for a few seconds or till a few bristles appear on top.

Turn over the roti and cook the other side for a few more seconds.

Lift the roti with a pair of flat tongs and roast over an open flame till brown spots appear on both the sides.

Smear 1/2 tsp ghee on top.
