Winters are on. Paneer is a rich source of proteins. I added sesame seeds and served it with assorted vegetables to create taste and nutrition combo for family.

Til Paneer with Assorted Vegetables recipe - How to make Til Paneer with Assorted Vegetables

Ingredients
200 gms paneer (cottage cheese)
1 tbsp ginger-garlic (adrak-lehsun) paste
8 to 10 soaked cashewnuts
1 tbsp soaked sesame seeds (til)
1 tbsp hung curds (chakka dahi)
1 tsp chopped green chillies
1 tbsp chopped coriander (dhania)
1 tsp olive oil
salt to taste
chilli powder to taste
1/2 cup sesame seeds (til) for coating
2 tbsp oil for shallow frying

For The Assorted Vegetables
1 tbsp olive oil
1 tbsp ginger-garlic (adrak-lehsun) paste
2 chopped green chillies
2 cups chopped mixed vegetables (red capsicum , green capsicum , yellow capsicum , cabbage , broccoli)
1/4 cup chopped onions
1 tbsp tomato ketchup
salt and freshly ground black pepper (kalimirch) to taste
Method
    Method
  1. Soak Cashew nuts and sesame seeds separately in a 1/2 cup of water for 40 minutes.
  2. Cut Paneer in four equal portions and keep aside.
  3. Now drain the excess water from cashew nuts and sesame seeds and grind this in a mixer to form a smooth paste
  4. In a mixer, add ginger-garlic paste, green chillies, coriander, salt, chilli powder and olive oil and grind all ingredients nicely.
  5. Now transfer this in a bowl add a tbsp of hung curd to this and mix it nicely.
  6. ADd the paneer fingers in this mixture and coat it nicely with this marination.
  7. Take 1/2 cup sesame seeds in a plate and coat marinated paneer nicely with seeds.
  8. Heat oil in a pan and shallow fry these marinated til Paneer nicely from all sides. Keep aside.

For Assorted Vegetables

    For Assorted Vegetables
  1. Heat the oil in a pan, saute garlic and green chilly in this.
  2. Add onions to this, cook for a minute on high flame.
  3. Add broccoli to this, saute it. Add red, green and yellow bell pepper to this and saute it for 2 minute
  4. Now add cabbage to this, saute it and add salt, black pepper and tomato sauce to this, cook it for another 2 minutes on high flame. Keep aside.

How to Serve

  1. Take a serving plate, keep some salad leaves and place your Til Paneer on this you can also use tikka stick for nice presentation . Serve this with assorted vegetables and chutney to your dears.
