Apple crumble goes very with ice-cream.
For pastry lining:- Beat butter and sugar till creamy.
- Whisk in eggs,fold in flour and vanilla.
- Chill for 1/2 an hour.
- Then roll into 10" circle and line a cake mould with a pastry.
- Replace in the refrigerator.
For cake mixture:- Beat butter and sugar till creamy.
- Whisk in egg and then milk.
- Sift flour with baking powder and add to the above mixture.
- Mix well and pour onto the pastry- lined tin.
- Spread it evenly.
For filling:- Peel and core apples:
- Chop into one inch dices.
- Add lemon juice, sugar, cinnamon and raisins and mix all together.
- Spread this apple mixture on the cake mixture.
For crumble:- Rub all the ingredients together till it resembles fresh bread crumbs.
- Sprinkle on the apple mixture and bake at 180 deg c till the top is crisp and golden.
- Serve warm with cream, ice-cream or custard.
