  1. To make aam ka panna, wash the raw mangoes and pressure cook for 4 whistles.
  2. Allow it to cool completely.
  3. Once cooled, peel and remove the pulp in a bowl.
  4. Add the cumin powder , black pepper, black salt, asafeotida and sugar and mix well till the sugar is dissolved.
  5. Add 3 cups of chilled water and mix well.
  6. Pour equal quantities of the drink into 4 individual glasses.
  7. Serve aam ka panna immediately.

To make the Aam Panna

  1. Wash the raw mangoes well to get rid of dirt and the juice that the tree secrets when you pluck them.
  2. Place the mangoes in a pressure cooker and add enough water to cover them. 
  3. Pressure cook the mangoes for 4 whistles to make them tender. We pressure cook them for so long because we need the flesh to br soft and to break away easily from the seed. Allow the pressure to drop naturally before opening the lid. 
  4. Remove the mangoes in a plate and allow them to cool completely.
  5. Peel off the skin of the mangoes.
  6. To make the Aam Panna, remove the pulp of the mangoes into a large bowl. Squeeze it with your hands, the pulp should come off easily.
  7. Add the cumin powder for its beautiful, earthy taste.
  8. Add black pepper for hint of spice in your Aam Panna.
  9. Add the black salt to taste. Black salt adds an unique touch to the drink. You can always substitute it with regular table salt.
  10. Add asafetida to zing up the flavor.
  11. Add the sugar now. You can increase or decrease the amount of sugar to your liking but this much sugar is perfect for a summer sweet and sour drink.
  12. Mix well with the help of a spoon till the sugar and masalas get completely mixed witht the mango pulp. Alternately, you can also mash it lightly if there are large pieces of raw mango flesh.
  13. Now add 3 cups of chilled water. This is one way of making this recipe, but we can also make another variation of Aam Ka Panna with mint leaves. 
  14. Mix Aam Panna well with a spoon or a whisk till the sugar has completely dissolved.
  15. Serve Aam Panna chilled. You can store it in the fridge for upto a week.

Hi mam, can u pl tell me, how much water is needed to boil 1 kg raw mangoes???
