Mexican Green Sauce for Tacos

When you think ‘green’, generally it is leaves and greens that come to your mind; however, here is a green sauce made without coriander, mint or any of the stereotyped ingredients.
This Mexican Green Sauce for Tacos, on the other hand, is a tangy sauce made with crisp green tomatoes spiked up with chillies. Store, and use as a dressing, spread or a dip, as required.
Method- To make mexican green sauce for tacos, combine the tomatoes, onions, green chillies, salt and ½ cup of water in a pressure cooker, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Allow the mixture to cool completely and blend in a mixer to a smooth mixture. Strain with a strainer.
- Transfer the mixture into a deep bowl, add the vinegar , mix well and keep aside.
