To make pizza in a pan, first make the pizza sauce. Make criss cross on the base of the tomatoes and place them in boiling water for 2 to 3 minutes or till the skin begins to peel. Drain the tomatoes, cool completely, peel, deseed and roughly chop them and blend in a mixer to a smooth pulp. Keep aside. Heat the olive oil, saute the garlic followed by the onions on a medium flame for 1 to 2 minutes. Add the prepared tomato pulp, oregano, chilli flakes, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Add the sugar, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside. The assemble the pizza and bake it. Spread the pizza sauce on a pizza base. Place a few capsicums, baby corn and zucchini evenly over it. Finally sprinkle, mixed herbs, chilli flakes and ¼ cup of cheese evenly over it. Heat a broad non-stick pan and add 2 tsp of ghee. Place the pizza in it and cover it with a lid and cook on a slow flame for approx. 4 to 5 minutes or till the base is crispy and the cheese has melted. Serve immediately.

6 large tomatoes
1 tbsp olive oil

1/2 tsp dried oregano
1 tsp dry red chilli flakes (paprika)
2 tbsp tomato ketchup
1 tsp chilli powder
salt to taste
1/2 tsp sugar

4 thin crust pizza base
1/2 cup sliced coloured capsicum
1/2 cup diagonally cut and blanched baby corn
1/2 cup diagonally cut zucchini
dried mixed herbs for sprinkling
dry red chilli flakes (paprika) for sprinkling
1 cup grated processed cheese
8 tsp ghee or for cooking

  6. Add the sugar, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.

  1. To make pizza in a pan, place a pizza base on a clean, dry surface, put ¼th of the pizza sauce and spread it evenly.
  2. Place a few capsicum, babycorn and zucchini evenly over it.
  3. Finally sprinkle, mixed herbs, chilli flakes and ¼ cup of cheese evenly over it.
  4. Heat a broad non-stick pan and add 2 tsp of ghee.
  5. Place the pizza in it and cover it with a lid and cook on a slow flame for approx. 4 to 5 minutes or till the base is crispy and the cheese has melted.
  6. Repeat steps 1 to 5 to make 3 more pizzas.
  7. Cut each pan pizza into 4 pieces and serve immediately.

For the Pizza Sauce

  1. For the Pizza Sauce, clean, wash and remove the eyes of the tomatoes. You do not want them in your pizza sauce.
  2. Make a criss-cross on the base of each tomatoes using a sharp knife. Make sure you use tomatoes that are firm and red in colour.
  3. Meanwhile, keep the water for boiling in a deep pan.
  4. Place the tomatoes in boiling water for 2 to 3 minutes or till the skin begins to peel.
  5. Drain the tomatoes using a strainer.
  6. Cool slightly and peel, they will peel easily because of the criss cross that was made at the base of the tomatoes.
  7. Cut them into 2 and deseed them using a sharp knife. Removing the seeds not only ensures a smooth puree, but also ensures that the sourness of the tomatoes reduces.
  8. Roughly chop them.
  9. Transfer to a blender.
  10. Blend in a mixer till smooth. Use a big mixer jar and not the small one as when you will blend it will overflow. Keep aside.
  11. In a broad non-stick pan, heat the olive oil. Olive oil is used in all Italian recipes as it taste really great. Add the garlic. You can also use the paste if you have it ready but finely chopped always gives a better taste and good mouthfeel.
  12. Sauté on a medium flame for a few seconds.
  13. Add the onions.
  14. Sauté on a medium flame for 1 to 2 minutes.
  15. Add the prepared tomato pulp.
  16. Add the oregano. If you wish you can also add mixed herbs.
  17. Add the chilli flakes.
  18. Add the tomato ketchup. This gives a little colour and sweetness to the sauce.
  19. Add the chilli powder and salt. Chilli powder is added to give more colour and spiceness.
  20.  Mix well and cook on a medium flame for 2 to 3 minutes stir it in between. Make sure you are careful of the spluttering that happens of the tomatoes.
  21. Add the sugar and mix well.
  22. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.

How to Proceed for the Pizza in a Pan

  1. Place a pizza base on a clean, dry surface. Pizza bases are available readily in the market but if you wish to make the pizza base at home.
  2. Put ¼th of the pizza sauce over it.
  3. Spread it evenly using a spoon.
  4. Place a few capsicum slices evenly over the pizza base using your hands.
  5. Place the babycorn and zucchini evenly over it. Always spread the veggies evenly so that there is no uneven distribution.
  6. Sprinkle little mixed herbs and chilli flakes over it. If you do not have mixed herbs dried oregano can also be used.
  7. Sprinkle ¼ cup of cheese evenly over it. Grate the cheese little thickly using a grater. We have used processed mizza cheese but if you want you can use mozzarella as well. 
  8. Heat a broad non-stick pan and add 2 tsp of ghee allow it to melt. Ghee gives the crispiness, you can also use butter or olive oil if you wish to.
  9. Place the pizza in the pan. This is an easier and more Indian way to make a pizza as not everyone in India owns an oven.
  10. Cover it with a lid. Make sure the lid is of the right size of the pan, steel or glass lid can be used.
  11. Cook pan pizza on a slow flame for approx. 4 to 5 minutes or till the base is crispy and the cheese has melted. Be very careful and keep checking the pizza base as it might start to burn.
  12. Place the prepared pizza in a pan on a clean, dry surface.
  13. Cut each pan pizza into 4 pieces using a pizza cutter or a sharp knife or a steel flat spatula.
  14. Serve no oven pizza or pizza in a pan immediately with an Ice Cream float to make a complete meal.

The pizza sauce was so yummy. The pizza came out very tasty, but the cheese did not melt fully. I used amul cheese cubes. Pls tell whether I should any other cheese.Thanks!:)
