What is corn tortilla made off?

  1. What is corn tortilla made off?  Traditionally tortillas are made with a Mexican flour called Masa Harina, water and salt. In India, we make corn tortilla with 1 cup maize flour (makai ka atta)3/4 cup plain flour (maida)3 tsp oil and salt. This yields 12  corn tortillas.

  1. To make dough for corn tortillas | Mexican corn tortilla | Indian style corn tortilla |  in a deep glass bowl put 1 cup maize flour (makai ka atta).
  2. Add 3/4 cup plain flour (maida).
  3. Add 3 tsp oil.
  4. Add 3/4 tsp salt.
  5. Add enough warm water to make a dough. We have used 3/4 cup of water.
  6. Knead the dough well.
  7. Cover and keep for half an hour.
  8. Knead again.
  9. Make the dough into a cylinderical shape. That makes it easier to make 15 round balls.
  10. Make 15 round balls.
  11. Sprinkle a little maize flour on the rolling surface. 
  12. Take a portion of the dough and flatten it. 
  13. Roll out the dough into 6" (150 mm. ) or 9 " (225 mm. ) diameter thin rounds with the help of maize flour. NOTE you will be using and need more maize flour to roll compared to rolling Indian rotis.

  1. To cook the corn tortilla | Mexican corn tortilla | Indian style corn tortilla |  first heat a non-stick tava (griddle) on a high flame. When hot place the tortilla gently over it. We use a non stick pan to prevent the tortillas from sticking.
  2. Cook the tortilla for about 40- 50 seconds.
  3. Flip over.
  4. Turning  it once brown spots begin to appear on the corn tortilla | Mexican corn tortilla | Indian style corn tortilla |  Don't overcook your corn tortilla as it can harden and become chewy.
  5. Place in a basket to keep warm (wrap in a kitchen towel).  Serve corn tortilla | Mexican corn tortilla | Indian style corn tortilla |  hot.

Oh they turned out wonderful. I had to tinker with the recipe a bit by making the maida:makki ratio 50:50 as I needed them to be really pliable. But man, made some insanely tasty taquitos with this one. Thanks!! Can always rely on this website for any dish. I don''t even bother checking elsewhere now.

As a latin I can tell you, real corn tortillas only have 2 ingredients, maize Flour and water.

Tortillas are easy to make and tastes very good. Forms the base for making burritos. Store your surplus in a freezer and use when required. Tortillas plus refried beans and salsa just taste great.
