Ingredients

4 large onions
2 tbsp tamarind (imli)
1/2 cup long grained rice (basmati)
3 large tomatoes , finely chopped
2 1/2 cups boiled soyabeans , minced
2 tbsp tomato puree
2 tbsp chopped parsley
1 tbsp garam masala
1/2 tsp turmeric powder (haldi)
1/4 tsp freshly ground black pepper powder
2 tsp sugar
1/4 cup pinenuts (chilgoza)
salt to taste

Method
  1. Soak the tamarind in 1/2 cup water for half an hour. Strain and reserve the liquid.
  2. Peel the onions, cut off the roots and top and boil the onions gently for 10 minutes.
  3. For the stuffing mixture, combine the rice, soya, one tomato, pine nuts, garam masala , turmeric, parsley, tomato puree, salt and pepper and mix well.
  4. Separate the outer layer of the onions from the smaller central layer and discard the latter.
  5. Stuff the onion shells with the stuffing mixture.
  6. Place the onion closely together in a non-stick pan and keep aside.
  7. Combine the tamarind liquid, sugar, remaining tomatoes and 1/2 cup water, mix well and pour over the onions.
  8. Cover the onions with a plate to keep them place tightly and simmer very gently for 1 hour.
  9. Serve hot with the pan liquid or tomato sauce and rice.
