This is certainly a no-hassle subzi.... just toss in all the ingredients and let the microwave work its magic.

Ingredients


1 cup chopped mixed vegetables (potatoes, cauliflower, peas, carrots)
1/2 tsp chilli powder
a pinch of turmeric powder (haldi)
1/2 tsp coriander (dhania) powder
1/2 tsp cumin seeds (jeera) powder
1/4 tsp garam masala
2 tbsp oil
salt to taste

To be ground into a paste
1/4 cup fresh grated coconut
1 medium sized onion
1 tsp chopped green chillies
12 mm. (½") piece of ginger (adrak)
5 small cloves of garlic (lehsun)

Method
  1. Combine the oil, the prepared paste, chilli powder, turmeric powder, coriander powder, cumin powder, garam masala, mixed vegetables, salt and ¼ cup water in a microwave-proof bowl, mix well and microwave on HIGH for 3 minutes.
  2. Stir once and microwave on HIGH for 2 minutes. Serve hot.
