As the name suggests, this dish brims with Tarkari (vegetables) and the nutrients that they contain. To add to the goodness of vegetables, moong dal is also a rich source of protein, folic acid and zinc. An interesting combination of health and taste makes this dish a must-try!

1/2 cup uncooked long grained rice (basmati)
1/4 cup yellow moong dal (split yellow gram)
1/2 tsp cumin seeds (jeera)
1 cup sliced mixed vegetables (brinjals, potatoes, onions, cauliflower florets etc.)
1/2 tsp turmeric powder (haldi)
1 tsp chilli powder
1 tsp Green Paste, page 98
1/2 tsp garam masala
salt to taste

  1. Clean, wash and soak the rice and dal together for 15 minutes. Drain and keep aside.
  2. Put 2 cups of water to boil and keep aside.
  3. Heat a pressure cooker on a medium flame and when hot, add the cumin seeds and dry roast for about 30 seconds.
  4. Add the vegetables, turmeric powder, chilli powder, green paste, garam masala and salt and dry roast for a few minutes.
  5. Add the drained rice, moong dal and the hot water, mix well and pressure cook for at least 3 whistles.
  6. Allow the steam to escape before opening the lid.
  7. Mix gently and serve hot.
