These fruity concoctions make ideal dessert options when the temperature rises.

Forget all the warm desserts that you relished through the winter. It’s time to bring on the cool stuff! Sorbets, often called ‘sherbet’ or ‘Italian ice’, make the perfect desserts when summer sets in.

A sorbet is a frozen dessert made from sweetened water flavoured with fruit. Dense and even in texture, a sorbet is different from a slushy ice or a granular granita. It is made like ice cream and gelato, by slowly freezing down the ingredients while churning them constantly to create an even, consistent texture. While a sorbet can contain milk products, unlike ice cream it does not have air whipped into it. In fact sorbets are often used as an alternative to ice cream for those on a diet because they do not contain any fat.

However, you don’t have to be on a diet to enjoy the delicious coolness of these light and fruity desserts. Why not try your hand at making some refreshing sorbets this year?

Black Grape Sorbet

An enticing deep purple in colour, and delicately flavoured with roasted cumin powder and black salt, this sorbet is sure to perk you up on a hot summer afternoon

Preparation time: 10 minutes.
Cooking time: Nil.
Serves 4.

1 cup black grapes (deseeded)
1 banana, finely chopped
2 tbsp powdered sugar
1/4 tsp lemon juice
1 tsp roasted cumin seeds (jeera) powder
1/4 tsp black salt (sanchal)

  1. Blend the black grapes and bananas to a fine purée in a food processor.
  2. Add the sugar, lemon juice, cumin powder, black salt and ¼ cup of water and mix well.
  3. Transfer it to a bowl and freeze till set.
  4. Transfer to a blender and liquidise till it is slushy.
  5. Serve scoops of the mixture in 4 individual bowls or long stemmed glasses.
  6. Serve immediately.
