Ingredients


For the biscuit crust
6 tbsp crushed marie biscuit
4 tbsp melted butter (approx.)
2 tsp sugar

For the filling
1 packet (100 grams) strawberry jelly or raspberry jelly
200 gms (7 oz.) fresh cream
3 tbsp powdered sugar
3/4 cup sliced strawberry

Method
For the biscuit crust

  1. Mix the biscuits, butter and sugar and press the mixture evenly into a 200 mm. (8") diameter loose bottom flan tin.
  2. Place in the refrigerator until firm.

For the filling

  1. Dissolve the jelly in 2 teacups of boiling water. Cool. Put to set partially in the refrigerator.
  2. Beat the cream with the sugar lightly.
  3. Mix the semi-set jelly and three-quarters of the cream very well. If you like, add a little lemon juice to taste.
  4. Spread the sliced strawberries over the chilled crust, keeping aside a few for decoration. Pour the jelly mixture on top and put to set in the refrigerator.

How to serve

  1. Remove the pudding from the flan tin, spread the remaining cream and decorate with sliced strawberries.
  2. Cut into small pieces and serve.
