An exotic variation of the regular veggie noodles one usually makes. This one has Chinese green melon, mushroom, broccoli and carrot, tossed in with sauces and boiled noodles. Gourmet Chinese on your dining table!

Ingredients

Method
  1. Soak the mushrooms in lukewarm water for about 15 minutes.
  2. Drain and discard the water. Keep the mushrooms aside.
  3. Heat the oil in a wok and sauté all the vegetables well on a high flame.
  4. Dissolve the cornflour in the stock and add the mixture to the wok.
  5. Stir in the soya sauce, salt and pepper.
  6. Adjust the water consistency to make a thin sauce.
  7. Cook all the vegetable in the sauce for 5 minutes.
  8. Add the noodles and bring to a boil.
  9. Serve immediately.

Tips
  1. To make vegetable stock, just add the vegetables like carrots, spring onions, capsicum and white pumpkin to a vesselful of water.
  2. Simmer for about 20 minutes. Strain, use the liquid as stock and discard the vegetables.
