Spinach and Carrot Rice ( Fun Food For Children)

Flavourful rice with vitamin-rich carrots and iron-rich spinach, this is ideal for packing in a lunch box. Butter adds to the goodness of this easy-to-make rice, while the vegetarian seasoning cubes impart an irresistible aroma typical of noodle and pasta preparations that kids enjoy so much!

  1. Heat the butter and add the cumin seeds.
  2. When they crackle, add the onions and saute for 3 minutes.
  3. Add the carrots and spinach and saute for 1 to 2 minutes.
  4. Add the rice, seasoning cube, salt, pepper and mix well.
  5. Cook on a slow flame for 5 to 7 minutes till the moisture evaporates.
  6. Serve hot.

  1. 1/2 cup uncooked rice makes approximately 2 cups cooked rice.
