Spiced Pancakes with Golden Cinnamon Pears

Canned pears take on a whole new taste when cooked with cinnamon and served with spiced pancakes.

Ingredients



For pancake
3/4 cup plain flour (maida)
1/4 tsp cinnamon (dalchini) powder
1/4 tsp nutmeg (jaiphal) powder
2 tbsp milk powder
1/4 cup sugar
1/4 cup water

For the golden cinnamon pears
1 tin (450 grams) pears
25 mm. (1") stick of cinnamon (dalchini)
1 tsp lemon juice
1 tsp brown sugar

Other Ingredients
butter for cooking

Method

    For the pancakes

    1. Mix together all the dry ingredients.
    2. Add the water and make a smooth batter of a coating consistency.
    3. Heat a 125 mm. (5") diameter non-stick pan. Add a little butter and spoon out the batter on to the pan to make a nice thick golden pancake.
    4. Repeat to make 3 more pancakes.

    For Pears

    1. Heat the pear syrup (from the tin) and brown sugar with cinnamon and lemon juice and let it boil for 2-3 minutes.
    2. Cook the pears in the syrup for a couple of minutes.

    How to proceed

    1. Serve the pancakes topped with the poached pears and the cinnamon syrup.
