A sweet treat made healthy with soya flour, these nankhatais can be baked in advance to satisfy your cravings for dessert! wheat germ adds vitamin e, an effective antioxidant and vitamin that is essential during pregnancy for the growing baby.

Ingredients

1/2 cup soya flour
1/2 cup whole wheat flour (gehun ka atta)
1/4 tsp baking soda
2 tbsp curds (dahi)
2 tbsp powdered sugar
1/4 tsp nutmeg (jaiphal) powder
1/4 tsp cardamom (elaichi) powder
2 tbsp wheat germ , refer handy tip
1 tbsp butter , softened
1 tbsp oil
a pinch of salt

Other Ingredients
1 tsp oil for greasing

Method
  1. Combine all the ingredients in a mixing bowl and mix well using your fingertips till they resemble breadcrumbs.
  2. Add approx. 2 tablespoons of cold water and knead it gently into a crumbly dough.
  3. Divide into 20 equal portions. Roll into a ball and flatten between your palms.
  4. Place them on a lightly greased baking tray.
  5. Bake in a pre-heated oven at 140°c (280°f) for 25 to 30 minutes or till they are golden brown.
  6. Cool and store in an air-tight container.
