Sandalwood gives this sherbet a pleasant cooling effect.

2 pinches of saffron (kesar) strands
4 tbsp lemon juice
6 tbsp sugar
1/4 tsp cardamom (elaichi) powder
1 1/2 tsp sandalwood (chandan) paste
1/4 tsp salt
crushed ice

For the sandalwood paste
sandalwood (chandan)
a little water


    For the sandalwood paste

    1. Rub sandalwood with a little water in a pestle and mortar or on a flat surface.

    How to proceed

    1. Heat the saffron in a small bowl with a little warm water and rub until it dissolves.
    2. Transfer the saffron water to a larger bowl and add 5 teacups of water with all the remaining ingredients except the ice.
    3. Pour into glasses and serve with crushed ice.
