Ingredients
1 ridge gourd (turai) , chopped
1 1/2 cups rice flour (chawal ka atta)
1 tbsp ginger-chilli paste
1 tsp cumin seeds (jeera)
1 tsp garam masala
salt to taste
1 tbsp chopped coriander (dhania)
1 tsp sesame seeds (til)
3 tbsp besan (bengal gram flour)
oil for deep frying
Method
    Method
  1. Sprinkle the salt on the chopped ridge gourd and keep aside for 15–20 minutes.
  2. Squeeze out the excess water from the ridge gourd.
  3. Combine the squeezed ridge gourd, cumin seeds, garam masala, chilli-ginger paste, rice flour, coriander, besan, til, salt and water only if needed and make dough.
  4. Roll out to a small balls and flatten it.
  5. Heat the oil in a kadhai and deep fry the flatten balls till it turns to golden brown in colour from both the sides.
  6. Remove on absorbent paper and serve hot.
