Pomodoro sauce is an Italian tomato based sauce that is tangy at the first bite then fades to nice pungent basil flavour. A delicious recipe that can be used as a base for your pastas

Ingredients


6 medium sized tomatoes

3 tsp olive oil
1/2 cup finely chopped onions
1 tsp finely chopped garlic (lehsun)
1/4 cup chopped fresh basil leaves
salt to taste
2 tsp fresh cream

Method
For the tomato concasse

  1. Boil a vesselful of water.
  2. Scoop out and discard the eyes of the tomatoes using the tip of a sharp knife.
  3. Make criss-cross cuts at the base of each tomato.
  4. Immerse the tomatoes in boiling water for 5 to 7 minutes.
  5. Remove and put in cold water for some time.
  6. When the tomatoes are cool, peel and discard the skin.
  7. Chop roughly and blend to a smooth purée in a blender. Keep aside.

How to proceed

  1. Heat the oil in a pan, add onions and garlic sauté for 3 to 4 minutes.
  2. Add the tomato concasse, basil and salt and sauté for 4 to 5 minutes.
  3. Add the cream and mix well.Use it as per the recipe.
