Penne with Cheesy Vegetables

Penne tossed in olive oil, garlic, balsamic vinegar and green veggies like snow peas, broccoli and asparagus and cheesy sauce.

3 cups cooked penne
2 tbsp olive oil
1 tbsp chopped garlic (lehsun)
1/4 cup blanched snow peas
1/4 cup broccoli florets
1/4 cup asparagus , cut into 25 mm. pieces
1 tbsp cornflour mixed with 1/2 cup milk
3 tbsp grated processed cheese
1 tsp dry red chilli flakes (paprika)
salt and freshly ground black pepper powder to taste
1/2 tbsp balsamic vinegar

For Garnishing
grated cheese

  1. Heat the olive oil in a broad non-stick pan, add the garlic and sauté for a few seconds.
  2. Add the snow peas, broccoli, asparagus, chilli flakes, salt and pepper and sauté for more 2 minutes.
  3. Add the cornflour mixture and cheese, mix well and cook till the mixture becomes smooth and saucy.
  4. Add the penne and vinegar and toss gently.
  5. Serve hot garnished with cheese.
