The flavour and texture of cottage cheese is always highlighted when there is an optimal addition of herbs and seasonings. Of the many herbs, mint works very well for the indian palate. Here is a scrumptious snack cum starter that features a very interesting combination of paneer and phudina, wherein the former brings in its unique texture and the latter imparts its refreshing flavour and aroma. Conjure up these paneer phudina tikkis easily within minutes right in front of your guests and serve piping hot, just off the tava!

Ingredients

3/4 cup grated paneer (cottage cheese)
4 tbsp mint leaves (phudina) , finely chopped
3 green chillies , finely chopped
2 to 3 tsp cornflour
salt to taste

Other Ingredients
oil for greasing and cooking

For Serving
1 tsp chaat masala

Method
  1. Combine all the ingredients in a bowl and mix well. Divide this mixture into 16 equal portions.
  2. Shape each portion into a round and flatten slightly to make tikkis.
  3. Heat a non-stick tava (griddle) and grease it with oil, place the tikkis and cook on both the sides using oil till they turn golden brown in colour.
  4. Serve hot sprinkled with the chaat masala.

Yummy tasty tikkis. Paneer and mint combine well and chillies add the spice element. They melt into your mouth.
