This tangy crunchy salad is a treat for tomato lovers. Not only it’s an excellent source of folic acid (vitamin b6) which keeps anemia at bay, but also rich in vitamin b1 (thiamin), vitamin b3 (niacin) and fibre due to the addition of walnuts and peanuts. Walnuts are also rich in omega 3-fatty acids which are considered to be a good source of fat.

Makes 4 servings

Ingredients

1/4 cup roughly chopped walnuts (akhrot)
2 cups cherry tomatoes , cut into half
1/4 cup chopped capsicum
1/2 cup roughly chopped basil leaves
1 tsp crushed peanuts
1 tsp roasted sesame seeds (til)

For The Dressing
1 tsp oil
1 tsp sugar
1 1/2 tsp lemon juice
1 tsp finely chopped basil
salt to taste

Method
  1. Combine the walnuts, cherry tomatoes, capsicum and basil leaves in a bowl and mix well.
  2. Just before serving, add the dressing and toss well.
  3. Sprinkle the peanuts and sesame seeds and toss well.
  4. Serve immediately.
