Ingredients

For Mushroom and Onion Soup
2 tsp oil
1 tbsp finely chopped garlic (lehsun)
1 cup finely chopped onions
3 cups chopped mushrooms (khumbh)
1 tbsp whole wheat flour (gehun ka atta)
2 stock cubes
salt and pepper to taste
Method

  1. To make mushroom onion soup, combine 2 stock cubes along with 3 cups of hot water, mix well and keep aside.
  2. Heat 1 tsp oil in a broad pan, add garlic and sauté for few seconds.
  3. Add onions and sauté on medium flame for 2 minutes.
  4. Add mushrooms and cook on medium flame for 3 to 4 minutes, while stirring occasionally.
  5. Remove a little mixture in a bowl and cool completely. Blend it to a smooth puree using ¼ cup of water.
  6. Heat 1 tsp oil in a deep kadhai, add wheat flour and sauté for few seconds.
  7. Add the prepared puree, remaining sautéed mixture, veg stock, salt and pepper to taste.
  8. Mix well and cook on medium flame for 5 minutes, while stirring occasionally.
  9. Serve mushroom onion soup hot.

Thiiiss soup was jusst toooo good!!! People who love mushrooms are sure to love it..The only flavoring was from the onions and black pepper which was so simple and subtle..Plus making in microwave is much easier...Too good..I avoided the cream though!!it still tastes good without the cream..
